You may have tried ramen cabbage salad at Hawaiian restaurants or Japanese American potlucks. This simple salad is very easy to prepare, inexpensive, and great for picnics and get-togethers.
You can eat it by itself as a side dish or put it in sandwiches. I like to add it to tacos and drizzle Sriracha hot sauce on it.
Simple Ramen Cabbage Salad
(Makes approximately four servings)
- Half of a medium sized head of green cabbage
- 1 package instant ramen (I recommend the Sapporo Ichiban chicken flavor)
- 1/2 cup canola oil
- 1 tablespoon sesame oil
- 1/3 cup white vinegar
- A little less than 1/4 cup sugar
- 1/2 teaspoon salt
- 1 teaspoon pepper
Using a sharp knife, thinly slice the cabbage into a large mixing bowl. Before opening the package of ramen, crush the ramen into small pieces by gently smashing the bag against the counter with your hand. Open the package of ramen and remove the soup packet. Put it on the side in case you want to add a bit of the flavoring to the salad dressing. Empty the contents of the package into the cabbage.
In a separate bowl or jar, mix the dressing ingredients together. Taste and adjust the flavoring as needed. I like to add a couple dashes of the ramen soup packet, just to add some more flavor.
Add the dressing to the bowl with the cabbage and ramen and mix together. Start with about 1/3 of the dressing, and then add as needed.
